Hotels and restaurants operating in Bali should be required to place Indonesian dishes on their menus, an academic said. Dewa Ngurah Suparta, professor of agriculture at Udayana University, said that the serving of local cuisines would enrich the experience of foreign and domestic visitors to Bali.
“It will also reduce our dependency on imported foods,” the professor said. Suparta said he warmly welcomed a new policy banning imported foods, including beef and 13 other agricultural commodities. Bali receives 3 million foreign visitors every year. “They must be introduced to local dishes. We are living on a tropical island. There is no need to import food from sub-tropical countries,” Suparta said. Tourism had to support local farming by procuring local food and serving local dishes, he said.
